Let’s explore the world of St-Feuillien.
Three ranges, three identities
Abbey beers: a legacy revisited
Our abbey beers maintain an unbroken tradition at l’Abbaye de St-Feuillien. They follow time-honoured recipes, with a touch of modern know-how, to offer rich, balanced flavours, sometimes enhanced by subtle notes of spice.
St-Feuillien Blonde and St-Feuillien Brune, both created in 1952, elegantly embody this tradition. In 1969, the brewery broke new ground with its Cuvée de Noël. Offering warm, festive aromas, it was one of the first Wallonian Christmas beers. The range was then expanded with the addition of Triple in 1988 and Quadruple in 2019 – a testimony to the ongoing evolution of this iconic lineage.
All Belgian abbey beers offer an elegant balance of tradition and modernity, inviting connoisseurs to rediscover an exceptional brewing heritage.
Useful info: Abbey beers particularly appeal to lovers of rich, traditional beers who want to enjoy an authentic, timeless taste experience.
The Signature range: innovation to enhance flavour
Created to please fans of more contemporary beers, St-Feuillien’s Signature range is a crucible for innovation, where modern techniques such as dry hopping allow us to explore new flavours.
Launched in 2009, Saison was inspired by the traditional beers of the past which were brewed to slake the thirst of farm workers. An immediate award-winner, it embodies both our Belgian heritage and the bold approach taken at Brasserie St-Feuillien.
2011 saw the launch of our Grand Cru, the result of painstaking work to create an exceptional Belgian beer, without compromising the purity of the flavours. Brewed with noble hops and with no added spices, it is notable for its subtle balance of malty roundness and controlled bitterness. This beer has a second fermentation in the bottle to develop a light effervescence and a delicate foam head that enhance the richness of its aromatic profile. Right from its launch, it impressed with its finesse and complexity, quickly establishing itself as a benchmark among Belgium’s blonde tasting beers.
This creativity was consolidated over the next few years: Belgian Coast IPA (2015), the result of a collaboration with an American brewery, impresses with its hoppy freshness that suits Belgian tastes. In 2019, FIVE offered a light, festive beer, while FRUIT, launched in 2023, impresses with its fruity and slightly sweet notes.
info: This range is designed for drinkers who love exploring complex flavours or who are looking for beers that are unique, bold and full of character.
New!
On 9 March 2024, St-Feuillien Grand Cru reached a new milestone when it became available in casks – the result of a year’s research into guaranteeing the same experience as with the bottled version. Thanks to the cask conditioning process, it loses none of its signature balance and offers even lighter effervescence and an optimal storage life. A long-awaited development that opens up new tasting opportunities for lovers of refined beers.
Grisette Bio : the authenticity of yesteryear, the freshness of today
Grisette Bio, a light and natural ale, is inspired by a heritage beer produced in the province of Hainaut at the end of the 19th century. In those days, every small brewery produced this refreshing and hoppy amber beer.
Following its relaunch by Brasserie St-Feuillien in 1919, Grisette evolved with the arrival of a (gluten-free) Blonde in 1995 and a Blanche in 1999. Both of these beers earned organic certification in 2014. Prize-winners at the 2016 World Beer Awards, they impress with their freshness and environmental credentials. Since 2019, the range has expanded to include Grisette Citra, a gluten-free triple beer with fruity notes.
With the Grisette Bio range, Brasserie St-Feuillien is reinventing a local tradition for a modern clientele seeking natural ingredients and authentic flavours.
Useful info: These beers mainly appeal to fans of light, environmentally friendly beers, but their fresh, accessible taste will also be enjoyed by a wider audience.
Know-how shared by all St-Feuillien beers
Whether passed down by tradition or the result of innovation, all St-Feuillien beers share the same commitment to exceptional brewing through the use of meticulously selected ingredients and precise production methods.
Water, a key part of their identity
All St-Feuillien beers are brewed with pure water drawn from the Le Roeulx water table. It is an essential element that accounts for up to 90% of the finished product. This consistently excellent water gives our beers their unique character and is ideal for top fermentation.
Unique yeast that makes all the difference
At the heart of its fermentation process, Brasserie St-Feuillien uses its own top-fermenting yeast strain, Saccharomyces cerevisiae, which is carefully cultivated and stored in-house.
This yeast, which is unique to the Brewery, is remarkable for its high tolerance to temperature variations, alcohol and wort density, so is able to ferment quickly and efficiently. As it is slightly dusty, it leaves part of its population in suspension during conditioning, which adds to the beer’s richness and texture. Its light phenolic character also adds a subtle touch of spice that accentuates the aromatic complexity of each brew.
Carefully selected raw materials
St-Feuillien beers also owe their excellence to the use of top-quality aromatic hops and rigorously selected malts, guaranteeing a perfect balance of bitterness, roundness and aromatic complexity.
A controlled fermentation process
Top fermented with no additives, St-Feuillien beers are the result of a meticulous process: :
Traditional fermentation, followed by conditioning in horizontal cylindrical tanks for 2 to 3 weeks to enhance their structure and develop their aromas.
Secondary fermentation in the bottle, for at least 15 days, produces a natural effervescence and refined aromatic complexity.
Unfiltered beers that retain all their richness and authenticity.
Driven by rigour and passion, Brasserie St-Feuillien ensures that every sip reflects this subtle balance between respect for traditional know-how and the relentless pursuit of excellence.
